Tomato sauce (Rougaille)



  • 250 grams tomotoes slice or diced
  • 1 small onion sliced
  • 1 tablespoon garlic crushed
  • 100 grams chillies
  • 2 tablespoons oil cooking or vegetable
  • 1 tablespoon tomato paste
  • salt for taste
  • 3 tablespoons thyme thinly cut


“Rougaille” or tomato sauce is very appreciated by all mauritians.  Very easy and to make.

  1. Blend tomatoes onion and chillies in a blender.
  2. Add two tablespoon of oil in a sauce pan and heat over a medium heat.
  3. Add 1 tablespoon of crushed garlic and stir in for about 30 seconds.
  4. Then add the blended tomato paste, salt for taste and thyme.
  5. Cover and cook on a low heat for about 15 mins.
