Mauritius Fried rice



2 servings


  • 3 eggs
  • 1 tablespoon salt
  • 1 pinch pepper
  • oil for cooking
  • 1 bunch spring onion
  • 1 tablespoon Soy sauce Light
  • 1 tablespoon Fish sauce
  • 1 tablespoon oyster sauce
  • 250 grams Chicken fillet
  • 2 carrots
  • 4 cups Rice Cooked


  1. In a bowl, beat eggs with salt and pepper.
  2. Chopped spring onion finely.
  3. Diced chicken and season with salt and fish sauce.
  4. Thinly cut carrots or shred them if easy.
  5. In a wok, heat up 2 tablespoon of oil.
  6. Fry chicken until gold in colour.  Move chicken aside when done.
  7. Fry eggs, stirring constantly into a scrambled egg.  Move eggs also aside
  8. Add more oil if needed.
  9. Fry the carrots and move aside when done.
  10. Add 3 tablespoon of oil and the add cooked rice.  Stir-fry the rice adding soy ans oyster sauce on top.
  11. Add the carrots, eggs and the spring onion to the rice.  Mix well.
