Crab Soup – “bouillion crabes”

Ingredients

  • 3 tablespoons oil
  • 1 onion chopped
  • 6 tomatoes diced
  • 1 tablespoon garlic/ginger crushed
  • 2 chilli
  • 1 tablespoon tomato paste
  • 2 pounds crab
  • 2 cups chicken stock
  • 3 cups water
  • salt for taste
  • pinch of pepper

Directions

  1. Season the crab in salt and pepper
  2. Heat up oil and cook onion until transparent in color
  3. Add tomatoes, thym, garlic, ginger and chilli. Mix and cook until a thick paste is obtained
  4. Add tomato paste, the water and chicken stock
  5. Also add crab
  6. Cook for 1/2hr on a moderate heat
  7. Add more salt if neccessary
